Drawing on the rich tradition of our area, we try to reintroduce the genuine simplicity of typical peasant cuisine linked to the products, the climate and the timing of the seasons. We do this by purchasing, as much as possible, raw materials directly from local producers who practice sustainable agriculture that respects the environment and people. In particular, the extra virgin olive oil, vegetables and wild herbs we use are produced and harvested by the Oasi Agricola Social Cooperative, which promotes the employment of disadvantaged people.
