Festival of the Fregnaccia in Montasola

In June in Montasola, a village with medieval charm located in the province of Rieti, the Sagra della Fregnaccia is held. The event celebrates one of the traditional peasant dishes. But what is the fregnaccia? It is a batter prepared with water, flour, herbs and eggs, which once fried is served with cheese. In the peasant tradition it was a dish that was eaten during harvest times, when time to devote to cooking was scarce, and therefore this dish that is simple but at the same time very nutritious was prepared. Some historians say that this dish was even present at the time of Christ and the recipe had been handed down to the present day.
