The Feast of the Cjarsons
A festival to celebrate one of Carnia's traditional dishes
In a nutshell
In June, the town of Sutrio hosts a tasty festival dedicated to one of Carnia's signature dishes, Cjarsons. This is a type of pasta stuffed with potatoes that is filled with ricotta cheese, to which numerous other ingredients are added, such as spices, dried fruits, herbs and more.
Its origin seems to be related to the "cramârs," spice peddlers, who from the 18th century crossed the Alps to sell their cargo in Germanic countries. To date there are more than 50 variations of these tasty "Cjarsons," and each family jealously guards its own recipe.
Every year in Sutrio, representatives from ten neighboring villages participate, preparing their own version of this delicious traditional dish, also offering sweet options and accompanying them with a fine selection of Friulian wines.
Tasting is possible by purchasing vouchers at the various entrances to the festival area.
