In the pretty town of Flaibano a festival is held every year in August dedicated to one of the area's typical dishes of excellence, frico.
Frico-a dish with ancient origins, mentioned in the medieval treatise "De Arte Coquinaria"-began as a poor man's dish, prepared in a special way in rural cuisine using ingredients such as cheese rinds and scraps from the processing of cheese wheels.
Three different types of frico can be tasted during the event: the classic one with potatoes, a revisited version with chili and one with wild herbs found in the meadows surrounding the Flaibano area. An excellent opportunity to taste the true Friulian tradition.
