One of the most important events in Cervia is "Sapore di Sale" dedicated to Cervia Salt (Slow Food Presidium) and the ancient salt-making tradition that has marked the life of the town for many centuries. The event has been taking place for almost 30 years and re-enacts "l'Armesa de Sel" that is, the shedding of salt, the feast of the salt workers that marked the end of the difficult working season in September. The "burchiella" (an ancient flat-bottomed boat used to transport salt) sails up the canal from the salt pans to the warehouses loaded with one hundred quintals of salt, which are then distributed to the public. There is no shortage of food stands highlighting local products and cuisine, such as fried fish, fried polenta with squacquerone cheese, dry passatelli and zucarèn (shortbread cookies typical of Romagna).
