An event held annually in the small village in the Lepini Mountains and dedicated to la zazzicchia (sausage) seasoned with chopped orange peels and pitartara (coriander seeds that are grown in the Prossedi countryside) and cooked at the foot of the Baronial Palace. Handicraft and Christmas markets, as well as music, serve as side events.
